1. Is this request related to a challenge you're experiencing? Tell me about your story.

PR #35708 introduces setup and deployment scripts for Dify. However, the environment variable merging logic is hard to maintain. The docker compose command provide a --env-file flag for environment variable merging and interpolation.

I propose simplify the corresponding script with --env-flag. This would reduce maintenance burden and preserve its benefits.
